Make the Salad:
Cut Chiquita® Pineapple Bites into chunks of 4. Toss scallops, pineapples, teriyaki sauce and crushed red pepper flakes together in a large bowl and marinate for ½ hour to 1 hour. Place 4 pineapple chunks and 4 scallops on each skewer and grill over medium heat for 6-8 minutes or until scallops are cooked through. Divide lettuces between 4 plates and place skewer on each salad. Dress with vinegar and olive oil. Salt and pepper to taste.
